Creamy Spinach Chicken

  • 1 cup bacon, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups white onion, finely chopped
  • 4 cups spinach
  • 1/2 cups cream cheese
  • 1 cup sour cream, thick
  • 4 chicken breasts, cut in half
  • 1/4 cups olive oil
  • 1 pinch salt
  • 1 pinch pepper, with lemon

  • For the filling, heat a skillet over high heat and cook the bacon until golden, add the garlic, onion, spinach, cream cheese, and sour cream. Cook until combined and achieve a creamy filling, season to taste with salt and set aside. Chill.
  • On a cutting board, place the chicken breast cut in half, season with salt and pepper with lemon on both sides, fill with the previous preparation, close well, and set aside.
  • Heat a grill over high heat and cook the chicken until it is cooked through and juicy. Serve and enjoy.
