Mini Chicken Skewers with Lemon and Honey

These chicken skewers with lemon and honey are perfect for a meal with friends or as a delicious snack. Take advantage of sunny days and prepare them on the grill, and pair with a cold beer.

  • 1/4 cups honey, (for the sauce)
  • 1/4 cups soy sauce, (for the sauce)
  • 1 lime, (for the sauce)
  • 1 teaspoon ginger, powdered (for the sauce)
  • 1 boneless chicken breast, in cubes
  • 1 teaspoon salt
  • 1/2 cups green onion
  • 2 tablespoons vegetable oil
  • 1 tablespoon parsley, finely chopped (for garnish)
  • 1 pinch pepper

  • For the sauce, mix all the ingredients in a bowl until combined.
  • Season the chicken cubes with salt and pepper and drizzle with some of the honey and lemon sauce, then marinate in the refrigerator for 20 minutes.
  • Assemble the skewers by alternating chicken with green onions.
  • In a skillet, heat the oil and fry the chicken breasts on all sides, basting with more sauce, until golden brown.
  • Serve and garnish with chopped parsley.
