Chicken Chipotle Burrito

  • 1 tablespoon butter
  • 3 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 chicken breast, cut into thin fajitas
  • 3/4 cups table cream
  • 1/4 cups evaporated milk
  • 1/4 cups chipotle chile in adobo sauce, ground
  • salt and pepper
  • 2 avocados
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon serrano chile, finely chopped
  • 1 tablespoon mayonnaise
  • 2 tablespoons lime juice
  • 3/4 cups refried beans
  • 4 Northgate flour tortillas
  • 1 cup Manchego cheese, grated
  • 1 tablespoon fresh cilantro

  • In a pan over medium heat, cook the onion and garlic with butter until translucent, add the chicken, season, and cook until golden.
  • Add the cream, evaporated milk, and chipotle, bring to a boil and cook for about 5 minutes or until thickened. Season with salt and pepper to taste, let cool.
  • For the guacamole, in a bowl mash the avocado with a fork, mix with red onion, serrano chili, mayonnaise, lime juice, and season.
  • For assembly, spread beans on each Northgate flour tortilla, add guacamole, chipotle chicken, manchego cheese, and cilantro leaves.
  • Wrap like a burrito and heat in a pan over medium heat before serving. Cut in half and enjoy.
