Slice the breast (into strips and then into cubes).
Cut the carrots into slices, and the bell pepper and onion into large cubes of approximately 2 x 2 cm.
Season the breast with salt, garlic powder, and lemon-pepper seasoning.
Sauté the chicken in olive oil; once it is well cooked, add the carrots and bell peppers, stirring continuously.
Add the onion until it becomes translucent.
Take a skewer and insert a piece of chicken, a slice of carrot, a piece of bell pepper, and one of onion. Repeat in the same order until the skewer is 3/4 full.
Drizzle with your preferred dressing; in this case, use chimichurri sauce and barbecue sauce.
Serve with mashed potatoes.
