If you want to give your daily meatballs a twist, you have to try these chicken meatballs, as they are not only economical but also homemade, and the spicy green sauce is delicious! Serve them with rice and beans.
Place the tomatoes, onion, garlic, chiles, and water in a saucepan and bring to a boil. Cook for 15 minutes or until the tomatoes are soft and change color.
Remove the ingredients from the saucepan (without water) and blend until there are no large lumps.
Heat the oil and sauté the sauce, and once it comes to a boil, add the Knorr® Suiza Chicken Bouillon cube, the nopales, and cook for 5 minutes over medium-low heat, stirring occasionally.
For the meatballs, mix the chicken, rice, and egg. Form the meatballs and add them to the sauce to cook on low heat for 5 more minutes or until the meatballs are ready.
Before serving, add the cilantro; mix and serve.
