Chicken Meatballs in Green Sauce

If you want to give your daily meatballs a twist, you have to try these chicken meatballs, as they are not only economical but also homemade, and the spicy green sauce is delicious! Serve them with rice and beans.

  • 10 tomatillos
  • 1/4 onions
  • 1 clove garlic
  • 2 serrano chiles
  • 1 cube Knorr® granulated chicken bouillon
  • 2 tablespoons vegetable oil
  • 2 cups nopal, cooked and diced
  • 400 grams chicken breast
  • 1 cup white rice, cooked
  • 1 egg
  • 1/4 cups fresh cilantro, chopped

  • Place the tomatoes, onion, garlic, chiles, and water in a saucepan and bring to a boil. Cook for 15 minutes or until the tomatoes are soft and change color.
  • Remove the ingredients from the saucepan (without water) and blend until there are no large lumps.
  • Heat the oil and sauté the sauce, and once it comes to a boil, add the Knorr® Suiza Chicken Bouillon cube, the nopales, and cook for 5 minutes over medium-low heat, stirring occasionally.
  • For the meatballs, mix the chicken, rice, and egg. Form the meatballs and add them to the sauce to cook on low heat for 5 more minutes or until the meatballs are ready.
  • Before serving, add the cilantro; mix and serve.
