Chicken Strips in Poblano Strips with Cream

  • 1/2 cups cream cheese
  • 2 cloves garlic
  • 6 Poblano chiles, deveined and seedless
  • 2 tablespoons oil
  • 1 kilo chicken breast , boneless, skinless, and cut into strips
  • 1 onion, cut into rings
  • 1 1/2 cups Mozzarella cheese, grated
  • 12 flour tortillas, hot

  • Blend the cream cheese, garlic, and 2 chiles until smooth. Cut the remaining chiles into strips.
  • Heat 1 tsp. of oil in a large skillet over medium heat. Add half of the chicken; cook, stirring for 3 min. or until it loses its pink color. Remove it from the skillet. Repeat this with the remaining oil and chicken; cover the chicken to keep it warm.
  • Place the onion and the chile strips in the skillet; cook for 3 min., stirring occasionally. Add the chicken and the cream cheese sauce; stir everything. Cover the skillet; cook on low heat for 13 min. or until the chicken is cooked and the mixture is completely hot; stir occasionally and add the crumbled cheese during the last 3 min. of cooking. Serve it with tortillas.
