  • 1 kilo chicken wings
  • 1 cup cornstarch
  • 1/4 cups potato starch, for the batter
  • 1/4 cups flour, for the batter
  • 1/2 teaspoons baking powder, for the batter
  • 1 tablespoon onion powder, for the batter
  • 1 egg, for the batter
  • 1/2 cups cow's milk, for the batter
  • salt, for the batter
  • pepper, for the batter
  • vegetable oil, for the batter
  • 3 tablespoons Jalapeño chile, pickled red, for the hot sauce
  • 2 árbol chiles, for the hot sauce, cleaned and soaked
  • 2 guajillo chiles, for the hot sauce, cleaned and soaked
  • 2 cloves garlic, for the hot sauce
  • 1/4 cups vinegar, for the hot sauce

  • Coat the chicken wings with cornstarch. Set aside
  • For the batter, in a bowl mix the potato starch, flour, baking powder, onion powder, egg, milk, and season with salt and pepper.
  • Heat the oil to 170°C, fry the wings for 3 minutes to brown the skin. Remove and coat with the batter mixture.
  • Fry again for 7 minutes to finish cooking the chicken.
  • Drain and remove excess fat with an Elite® megaroll kitchen towel.
  • For the sauce. Blend the red jalapeño chili with the árbol chili, guajillo chili, garlic, and vinegar.
  • Coat the wings with this sauce and serve immediately, present with your Elite® ultra napkins.
