Chicken with Cheese Wire

  • 1/2 cups chorizo, crumbled
  • 1/2 cups bacon, chopped
  • 2 tablespoons garlic, finely chopped
  • 1 red onion, cut into pieces
  • 2 chicken breasts, skinless, boneless, diced
  • 1 cup button mushrooms, sliced
  • 1 yellow bell pepper, cut into pieces
  • 1 red bell pepper, cut into pieces
  • 1 bell pepper, orange cut into pieces
  • 1 pumpkin, cut into half moons
  • 1 pinch salt and pepper
  • 1 cup Manchego cheese, grated

  • Heat a skillet over medium heat and fry the chorizo and bacon until golden. Add the garlic and onion and cook until translucent. Add the chicken, season with salt and pepper, and cook until golden.
  • Once the chicken is cooked, add the vegetables one by one, cooking a few minutes before adding the next. Finally, add the cheese and cook for 5 more minutes until melted, adjusting seasoning.
  • Serve the wire hot accompanied by corn tortillas, salsa, and lime.
