  • 4 chicken thighs
  • 1/4 cups cilantro, finely chopped
  • 3 tablespoons olive oil
  • 1 lime, seedless
  • 1 teaspoon cumin
  • salt
  • pepper
  • butter
  • 4 cups new potatoes, halved
  • 2 tablespoons garlic, finely chopped
  • white rice, cooked

  • Place the chicken thighs in a bowl and add the cilantro, garlic, olive oil, lime juice, cumin, salt, and pepper. Mix, cover, and let it rest in the refrigerator for 30 minutes.
  • Melt a little butter in a pan and sear the chicken thighs for 3 minutes on each side. Remove from the pan and set aside.
  • Add a little more butter to the same pan, add the garlic and potatoes, and cook for 4 minutes. Then, incorporate the chicken thighs, cover with aluminum foil, and bake at 180 °C for 30 minutes.
  • Serve the cilantro chicken and accompany with white rice and a refreshing drink.
