  • 1/2 kilos ground chicken
  • 1 pinch salt and pepper
  • 1 cup deli ham, diced
  • 1 cup Oaxaca cheese, shredded
  • 2 eggs, beaten for breading
  • 1 cup breadcrumbs, for breading
  • vegetable oil, for frying
  • 1 tablespoon vegetable oil, for the sauce
  • 2 cloves garlic, chopped for the sauce
  • 1/2 white onions, chopped for the sauce
  • 5 tomatoes, quartered, for the sauce
  • 2 chipotle chiles, for the sauce
  • 1 cup chicken broth, for the sauce
  • 1 cup cream cheese, for the sauce
  • 1 cup sour cream, for the sauce
  • fresh oregano, for decoration

  • For the meatballs, in a bowl mix the ground chicken with salt and pepper to taste, form the meatballs, fill with diced ham and a bit of shredded cheese, set aside.
  • To bread, dip the meatballs in the egg and coat with breadcrumbs.
  • Heat a pot over medium heat with the oil and fry the meatballs until well cooked. Drain on paper towels and set aside.
  • For the sauce, heat a pan over medium heat with a square of oil and fry the garlic with the onion, tomato, and chipotle chili until the tomatoes almost break down. Fill with chicken broth and cook until reduced. Blend with cream cheese and cream until you obtain a smooth sauce.
  • Serve a pool of sauce on each plate, place the meatballs, and decorate with oregano.
