Crispy Fried Chicken

  • 1 cup cow's milk, for the buttermilk
  • 2 tablespoons lime juice, for the buttermilk
  • 1 1/2 tablespoons paprika
  • 1/2 tablespoons cayenne pepper
  • 1 tablespoon onion powder
  • 1/2 tablespoons garlic salt
  • 1/2 tablespoons white pepper
  • 2 tablespoons salt
  • 1/2 tablespoons raw sugar
  • 3 chicken thighs, skinless
  • 3 chicken drumsticks, skinless
  • 2 eggs
  • 2 leaves bay
  • 1 cup flour
  • 3/4 cups cornstarch
  • 1 cup corn flakes
  • 1 tablespoon baking powder
  • 3 cups vegetable oil, for frying

  • For the buttermilk, mix the milk with lemon juice, let it sit for 10 minutes, and set aside.
  • Mix the paprika, cayenne pepper, onion powder, garlic salt, white pepper, salt, and brown sugar. Add the chicken and, using a spoon, coat it thoroughly.
  • In a bowl, whisk the buttermilk with the egg. Add the chicken pieces, bay leaves, and marinate for 2 hours.
  • In a bowl, combine the flour, cornstarch, cornflakes, and baking powder.
  • Dredge the chicken pieces in this mixture, making sure to cover them well on all sides.
  • Heat the oil over medium heat and fry the chicken until golden and crispy, about 10 minutes. Drain on paper towels.
  • Serve hot and accompany with mashed potatoes.
