2 chicken breasts, large
6 tomatillos

Low
Boil water to cook the tomatoes, then remove their skin.
Blend the tomatoes concasse along with a bell pepper, an onion, and garlic.
In a saucepan, add oil and pour in the previous mixture, let the napole sauce thicken.
Debone and wash the two chicken breasts, cut them into fillets, and add salt and pepper to taste.
In a skillet, add the oil and sear the chicken fillets. Remember not to overcook the breast to prevent it from drying out.
Julienne an onion, two tomatoes, and a bell pepper.
In the same skillet where you seared the chicken fillets, sauté the vegetables.
Once everything is well sautéed, add the chicken fillets and gradually the napole sauce.
Serve with rice and mashed potatoes.
