Chicken Fajitas with Nopales in Pasilla Sauce

Cook this easy and quick chicken fajitas recipe with nopales in just 35 minutes. This is a very practical stew for any day of the week, with its delicious pasilla sauce made with seasoned tomato purée. The fajitas are perfect for tacos and can be accompanied with beans or rice, and a little crumbled panela cheese.

  • 5 pasilla chiles, rehydrated and soaked in hot water, for the sauce
  • 2 cups Del Fuerte® seasoned tomato sauce, for the sauce
  • 1 teaspoon allspice berry, roasted, for the sauce
  • 1 teaspoon cumin, whole and roasted, for the sauce
  • 1/4 bunches fresh cilantro, for the sauce
  • 1 teaspoon oregano, for the sauce
  • 2 teaspoons vegetable oil
  • 2 chicken breasts, cut into strips or fajitas
  • 1 cup onion, sliced
  • 1 cup nopal, cooked and cut into strips
  • 1 pinch salt
  • tortillas, for tacos
  • fresh cilantro
  • panela cheese, crumbled, for tacos

  • For the sauce, place the pasilla chile with its soaking water in the blender, add El Fuerte® Seasoned Tomato Purée, allspice, whole cumin, cilantro, and oregano, and blend until you get a smooth sauce. Reserve.
  • Heat a deep grill pan over medium heat, add the oil, and cook the chicken breasts until grilled and browned. Add the onion, nopales, and then pour in the sauce you blended earlier; season with salt and cook until the sauce slightly reduces. Keep warm.
  • On a plate, place warm tortillas, serve the fajitas, and accompany with fresh cilantro and panela cheese. Enjoy.
