Chicken Meatballs in Guajillo Sauce

These meatballs are delicious; I love the combination of guajillo with chicken meat. Try making them; you won't regret it.

  • 6 guajillo chiles, roasted and seedless
  • 1/2 onions, roasted
  • 2 cloves garlic, roasted
  • 6 eggs , boiled
  • 1/4 cups breadcrumbs
  • 1 sprig fresh cilantro
  • 850 grams ground meat, chicken
  • 5 tomatoes, skinless and seedless
  • 2 cloves
  • 4 cups chicken broth
  • 1 egg
  • 1 tablespoon mustard
  • 1/2 onions, chopped
  • 600 grams Tyson® chicken breast fillet

  • Combine the ground chicken with the chopped onion and garlic cloves, finely chopped cilantro, mustard, beaten egg, and breadcrumbs. Mix with your hands.
  • Form the meatballs and stuff them with half of a boiled egg.
  • Soak the chiles in hot water, blend them with the garlic and roasted onion. Add the chicken broth, blend again, then add the tomatoes, clove, and cumin. Strain and bring to a boil in a pot.
  • Place the meatballs in the broth and let simmer over medium heat until cooked. Season with salt and pepper to taste.
