Chicken with V8 Juice

Recipe for chicken with vegetables seasoned with V8 juice sauce.

  • 1 kilo chicken drumstick, fresh or a whole chicken
  • 1/4 kilos carrot , julienned
  • 1/4 kilos zucchini , cut into julienne
  • 2 sprigs celery, julienned
  • 1/4 kilos peas, fresh
  • 3 tomatoes, medium, cut into strips
  • 1/2 onions, thinly sliced
  • 1 anaheim chili, julienned
  • 2 vegetable juice, V8
  • 1 tomato purée
  • 1 teaspoon olive oil
  • salt , and pepper to taste

  • Season the chicken pieces with salt and pepper and sauté in a pan.
  • Add the tomato, onion, and chili, and let it make a sauce, then add the puree, allowing it to boil a bit.
  • A little bit of water is added so that it doesn't dry out until the chicken is pre-cooked, then V8 is added, and it is left to boil until the chicken is cooked to your liking.
  • Then add the carrot, let it boil for 2 minutes, and add the celery, boil for 2 minutes, and then add the peas and zucchini, add salt and pepper to taste.
  • Let it boil for 2 more minutes and turn off the heat.
