First of all, let’s prepare all the vegetables and the chicken.
Peel the onion and slice it into julienne (thin strips).
Wash the pepper, remove the seeds, and cut into more or less thin and not very long strips.
Wash the mushrooms and slice them.
Finally, take the breasts and cut them into small pieces or thin strips (to your liking).
In a large skillet, add 5 tablespoons of sunflower oil.
Put over medium heat and add the raw almonds.
Leave until the almonds are golden on all sides.
When the almonds are ready, drain them with a slotted spoon and set them aside.
Season the chicken with a little fine salt and ground black pepper.
Increase the heat under the pan with the oil.
When the oil is hot, add the chicken and brown it well.
When the chicken has taken color, remove it with a slotted spoon and set aside.
Now let the oil heat over medium heat and add the peppers.
Leave for 5 minutes and then add the onion.
Leave for another 5 minutes and then add the mushrooms.
Leave until the vegetables are just right.
When the vegetables are almost ready, heat a pot with water and salt.
Cook the Chinese noodles according to the instructions on the package. Then drain them well.
The vegetables should be ready, so it’s time to add the chicken and the reserved almonds.
Also add the soy sauce and stir well.
Then add the Chinese noodles in several batches while mixing everything.
If it doesn’t all fit in the pan, you can mix it in the same pot where you cooked the noodles.
When everything is well mixed, taste it, and if necessary, add a little more soy sauce.
