Chinese Noodles with Chicken and Almonds

  • 1 package fideo pasta, wheat noodles (250 grams)
  • 2 chicken breasts, medium
  • 3 tablespoons almonds, raw peeled
  • 1 red bell pepper, medium
  • 1 yellow onion, medium
  • 1/4 kilos white mushroom
  • soy sauce
  • sunflower oil
  • table salt
  • black pepper

  • First of all, let’s prepare all the vegetables and the chicken.
  • Peel the onion and slice it into julienne (thin strips).
  • Wash the pepper, remove the seeds, and cut into more or less thin and not very long strips.
  • Wash the mushrooms and slice them.
  • Finally, take the breasts and cut them into small pieces or thin strips (to your liking).
  • In a large skillet, add 5 tablespoons of sunflower oil.
  • Put over medium heat and add the raw almonds.
  • Leave until the almonds are golden on all sides.
  • When the almonds are ready, drain them with a slotted spoon and set them aside.
  • Season the chicken with a little fine salt and ground black pepper.
  • Increase the heat under the pan with the oil.
  • When the oil is hot, add the chicken and brown it well.
  • When the chicken has taken color, remove it with a slotted spoon and set aside.
  • Now let the oil heat over medium heat and add the peppers.
  • Leave for 5 minutes and then add the onion.
  • Leave for another 5 minutes and then add the mushrooms.
  • Leave until the vegetables are just right.
  • When the vegetables are almost ready, heat a pot with water and salt.
  • Cook the Chinese noodles according to the instructions on the package. Then drain them well.
  • The vegetables should be ready, so it’s time to add the chicken and the reserved almonds.
  • Also add the soy sauce and stir well.
  • Then add the Chinese noodles in several batches while mixing everything.
  • If it doesn’t all fit in the pan, you can mix it in the same pot where you cooked the noodles.
  • When everything is well mixed, taste it, and if necessary, add a little more soy sauce.
