Dry Hen

The dry hen dish is delicious, it is one of the most popular typical Ecuadorian dishes. The traditional recipe included chicha in its preparation, a very popular fermented drink of the time. It is an easy chicken recipe that is very flavorful.

  • 1 orange
  • water
  • salt
  • cumin
  • 1 green bell pepper, finely chopped (for the filling)
  • 1 onion, finely minced (for the filling)
  • 2 tomatoes, peeled and diced (for the filling)
  • 1 sprig parsley , (for the filling)
  • 1 sprig fresh cilantro, (for the filling)
  • 1/2 chiles, (for the filling)
  • achiote paste, for the filling
  • pepper , sweet amount as needed (for the filling)

  • Prepare the sauté.
  • Blend the sauté ingredients. Set aside.
  • Add the hen in eighths to the blended sauté, add the sweet pepper and orange juice.
  • Cook on low heat until the meat is tender.
  • Adjust the flavors.
