Wings with Achiote and Red Chili over Rice with Vegetables

  • 4 chicken wings
  • 100 grams achiote
  • 3/4 cups tomato purée
  • 3 red chiles, fresh
  • 3/4 cups olive oil
  • 4 teaspoons white vinegar
  • 2 teaspoons ground pepper
  • 4 teaspoons salt
  • 1 cup white rice, for the rice with vegetables
  • 1 broccoli, precooked
  • 2 zucchinis
  • 1/2 cups raw pea, precooked
  • 2 cups water
  • 2 teaspoons salt
  • 1 teaspoon ground pepper

  • Blend the marinade ingredients very well and add them to the well-washed wings. Cut the red chili into thin slices, add it, and finally olive oil; let it rest for 30 minutes.
  • After some time, place the wings on a tray to bake for 25 minutes at 200°C.
  • Cut the broccoli, zucchini, and clean the peas; give the vegetables a precook, being careful not to overcook. Or add them raw; they will cook with the rice if you like them al dente.
  • To prepare the rice, add the water, followed by the rice and vegetables, as well as seasoning with salt and pepper. When it boils, cover and cook for 8 to 10 minutes for the first check. Don't forget to lower the temperature for even and complete cooking.
  • Serve your rice and place the freshly baked wings on top.
