Glazed Orange Chicken

  • 1 Vita + ® orange pouch
  • 1/2 cups apple cider vinegar
  • 1/2 cups raw sugar
  • 1/4 cups honey
  • 2 tablespoons ground chipotle chile
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon onion, chopped
  • 1/4 teaspoons cumin
  • 1 teaspoon oregano
  • vegetable oil
  • 1 chicken breast, halved, skinless and boneless
  • salt

  • 2 carrots, in thin strips
  • 2 oranges, in wedges

  • In a pot over medium heat, cook the Vita+® orange pouch with vinegar, sugar, honey, chipotle, garlic, onion, cumin, and oregano until it comes to a boil. Lower the heat and cook until reduced. Let it cool slightly.
  • Blend the previous preparation until smooth and set aside.
  • In a skillet over medium heat, heat the oil and sear the previously seasoned chicken breasts with salt and pepper on both sides.
  • Once the chicken is golden brown on the outside, add the sauce and cook while constantly basting until the chicken is cooked through. At ¾ of the cooking time, add the carrots to glaze them.
  • When the chicken is ready and the carrots are cooked, add the orange wedges, cook for 1 more minute, adjust seasoning, and serve.
