Honey and Chipotle Glazed Chicken

  • 2 tablespoons olive oil, for the pico de gallo
  • 2 tablespoons lemon juice, for the pico de gallo
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons butter, for the glaze
  • 2 cloves garlic, finely chopped, for the glaze
  • 1/4 cups lime juice, for the glaze
  • 1 cup honey, for the glaze
  • 1/4 cups ground chipotle chile, for the glaze
  • 1 tablespoon Dijon mustard, for the glaze
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 2 chicken breasts, cleaned and boneless

  • For the pico de gallo, in a bowl mix the mango with the red onion, cucumber, tomato, manzano chili, cilantro, olive oil, lemon juice, and season with salt and pepper.
  • Heat a small pot over medium heat with the butter and cook the garlic, add the lemon juice, honey, chipotle, mustard, season with salt and pepper, and cook until reduced.
  • Heat a grill pan over medium heat with the butter and oil, season the chicken, and sear the chicken breast until golden brown, add the glaze and baste constantly during cooking. When the chicken is cooked, remove and slice into strips.
  • On a plate, serve a bed of rice and place the chicken strips on top, add the pico de gallo, fresh cilantro, and yellow lemon. Enjoy.
