Chicken Barbecue

  • 1/2 cups orange juice, acidic
  • 1 tablespoon vinegar
  • 1 teaspoon dried oregano, ground
  • 1 teaspoon cumin powder
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/4 onions, finely chopped
  • 1/2 cups ketchup
  • 2 chipotle chiles, with adobo
  • banana leaves
  • 2 chickens, cut into pieces

  • Blend the chipotles, ketchup, onion, orange juice, vinegar, cumin, oregano, salt, and sugar.
  • Strain the sauce and set aside.
  • Cover well and refrigerate for a whole day.
  • Place the chicken in a baking dish and add 1/3 of the sauce, cover well and refrigerate for a whole day.
  • Place a layer of banana leaves in a large baking dish. Arrange the pieces of chicken and pour the rest of the sauce over them.
  • Season with salt and pepper to taste and bake at 180°C for 1.5 hours. Check, and if the meat is tender and easily pulls apart, it will be ready.
