1/2 cups orange juice, acidic
1 tablespoon vinegar
1 teaspoon dried oregano, ground
1 teaspoon cumin powder
1 teaspoon brown sugar
1 teaspoon salt
1/4 onions, finely chopped
1/2 cups ketchup
2 chipotle chiles, with adobo
banana leaves
2 chickens, cut into pieces

Blend the chipotles, ketchup, onion, orange juice, vinegar, cumin, oregano, salt, and sugar.
Strain the sauce and set aside.
Cover well and refrigerate for a whole day.
Place the chicken in a baking dish and add 1/3 of the sauce, cover well and refrigerate for a whole day.
Place a layer of banana leaves in a large baking dish. Arrange the pieces of chicken and pour the rest of the sauce over them.
Season with salt and pepper to taste and bake at 180°C for 1.5 hours. Check, and if the meat is tender and easily pulls apart, it will be ready.
