Chicken Enfrijoladas

They are perfect for breakfast or dinner, made in no time and are delicious. They are my son's favorites!

  • 300 grams beans, cooked
  • 1/2 chicken stock
  • 1/4 onions
  • 1 hoja santa
  • 1 clove garlic
  • 10 corn tortillas
  • 1 chicken breast , shredded
  • cotija cheese , to taste
  • sour cream , to taste
  • 1/4 chorizos

  • Place the beans, chicken broth, cream, onion, garlic, and hoja santa.
  • Fry them in a pan with a little hot oil. Season to taste; if it becomes too thick, add more broth.
  • Pass the tortillas through hot oil, and remove the excess grease with absorbent paper.
  • Fold the tortillas on a plate, fill them with the shredded chicken, and bathe them with the bean sauce.
  • If desired, you can fry some chorizo and distribute it throughout the plate.
  • Sprinkle with cotija cheese and add more cream if needed.
