Close the Olla de Presión Express® and put the pressure regulator on it, place it on
the stove over high heat for about 25 minutes
or until a constant stream of steam
comes out, then lower the heat
to medium and cook for 10 minutes.
Remove
the Olla de Presión Express® from the heat, let
it cool, take off the pressure regulator,
open the Olla de Presión Express® and you’re done!
To serve, heat the mole and
accompany it with red rice and hot
corn tortillas.
