Chicken in Mole de Xico

The sweet touch of this mole from the state of Veracruz has earned international recognition. Its more than 25 ingredients, ranging from cashews and dried fruits to three types of chiles and various spices, achieve an excellent combination.

  • 500 grams mole sauce, Xico in paste
  • 750 milliliters chicken broth
  • 8 chicken drumsticks, with thigh
  • 2 teaspoons salt

  • Blend the mole with the broth until combined. Pour into the Olla de Presión Express® and add the chicken and salt; mix again.
  • Close the Olla de Presión Express® and put the pressure regulator on it, place it on the stove over high heat for about 25 minutes or until a constant stream of steam comes out, then lower the heat to medium and cook for 10 minutes.
  • Remove the Olla de Presión Express® from the heat, let it cool, take off the pressure regulator, open the Olla de Presión Express® and you’re done!
  • To serve, heat the mole and accompany it with red rice and hot corn tortillas.
