Chicken in Pulque Sauce

You won’t believe the flavor that pulque gives to the chicken; it’s spectacular. This recipe is a bit spicy but perfect for a family Sunday.

  • 1 1/2 onions, sliced
  • 3 cloves garlic
  • 1 kilo tomato
  • 6 baby nopales
  • 800 milliliters chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • ground black peppers
  • 4 cups pulque
  • 1 kilo chicken, in pieces

  • Sear the chicken pieces in a very hot pan with oil.
  • Add the sliced onion and garlic, diced tomato, and sliced nopales.
  • Pour in the cups of pulque, season with salt to taste, and add oregano, cumin, and pepper.
  • Once it comes to a boil, pour in the chicken broth, cover, and cook over medium heat. Serve in deep plates.
