My grandma Juanita used to make this chicken, and in her honor, I share it with you. A delicious spicy dish with the flavor of Mexico, prepare this dish for your favorite guests; they will love it.
1 chicken, cut into pieces or 1 kg of boneless chicken breasts
1 morita chile
1 guajillo chile
2 black pepper, whole
1 pinch cumin
2 tomatoes, medium
8 tomatillos, medium
1 clove garlic, large

1/2 cubes chicken broth

In a pot, fry the washed chicken with very little oil; cooking spray also works to avoid extra calories. Add a little salt and let it cook.
We clean the morita and guajillo chiles by hand to remove any dust or dirt they may have (do not wet them with water). Using tongs, we roast them over direct fire on the stove for just 4 seconds on each side. They should not burn, or they will make the dish bitter.
In the blender, blend the roasted chiles without stems, the washed and chopped tomatoes, the half cube of Knorr, and the other ingredients on the list along with a little water for a smooth blend.
The previous blended mixture is added to the pot when the chicken has released most of its water or when it is more fried, according to taste. Adjust the seasoning and let it cook until the chicken is tender, ensuring that the sauce does not become too dry.
