Chicken Medallions with Chipotle

A spicy recipe that is very easy to make and also delicious.

  • 6 chickens, into medallions
  • 1 can evaporated milk
  • 1 can ear corn
  • 2 tablespoons butter
  • 1 canned chipotle pepper
  • 1 garlic
  • salt, to taste
  • pepper, to taste

  • In a non-stick skillet, melt the butter and brown the medallions.
  • Add salt and pepper to taste.
  • Once the medallions are cooked, add the corn kernels.
  • Blend the evaporated milk with the garlic and the desired amount of chiles.
  • Finally, pour into the skillet with the chicken and let it boil for a few minutes.
