With very clean hands, in a bowl, knead the dough by gradually adding water or broth until it has a good consistency (manageable) to make the tortillas.
Take a small ball of dough and flatten it to form the tortilla with your hands or using a tortilla press.
On one edge of the tortilla, add a tablespoon of chicken tinga and then fold it over, pressing the edges together so the filling doesn’t spill out.
In a skillet with enough oil, fry the quesadillas on both sides. Once golden brown, remove them from the oil and let them drain on a plate with absorbent paper. And they’re ready to serve!
