Chicken Tostadas with Mole

  • 4 cups chicken broth, for mole
  • 1 cup mole sauce, in paste
  • 1 Mexican chocolate tablet, for mole
  • 1 pinch salt, for mole
  • 1 chicken breast, cooked and shredded
  • 1 cup refried beans
  • 8 corn tostadas
  • sour cream
  • queso fresco, crumbled
  • avocado, sliced into a fan for decoration
  • red onion, in rings for decoration

  • Heat the chicken broth in a small pot until it reaches boiling point, dissolve the mole paste in the broth, and add the table chocolate, season with a little salt to your taste, and cook for 10 minutes until it reduces. Add the shredded chicken and cook for 5 more minutes.
  • On a tostada, spread beans, serve the chicken with mole, and accompany with cream, fresh cheese, avocado, and red onion.
