Soak the maguey leaves in warm water for 15 minutes.
Spread each maguey leaf and place in the center a piece of chicken, 3 baby potatoes, 1 tablespoon of butter, one ounce of white wine, one chipotle pepper, a pinch of thyme and cumin with salt to taste.
Once filled, proceed to wrap the mixiote as follows. Taking each end to form a pouch that we will tie with hemp thread and a firm knot to prevent them from coming undone.
Place the mixiotes in the pressure cooker well arranged and standing so they can steam on the rack for 5 minutes.
