  • 2 chickens, cut stew into pieces
  • 8 tablespoons lard
  • 4 tablespoons toasted sesame seeds
  • 8 ancho chiles
  • 2 pinches pepper
  • 5 cloves garlic
  • 4 mulato chiles
  • 3 cloves
  • 4 leaves bay
  • 2 bolillo rolls, sliced and fried
  • 1 1/2 onions
  • 1 stick cinnamon
  • 2 sticks chocolate
  • 2 corn tortillas

  • Soak the chiles in hot water and grind them with the garlic, bay leaf, sesame seeds, cloves, allspice, cinnamon, onion, fried bolillo, chocolate, and the toasted tortilla until a paste forms.
  • Fry the mixture with lard, season with salt and enough chicken broth to achieve a good thickness. Add the chicken. Serve.
