Toast the pumpkin seeds and sesame in a skillet. Set aside.
Cook the tomato, chiles, garlic, ginger, and onion in a pot with water.
Grind the seeds until you obtain a paste.
Add the cooked vegetables, spices (cumin, oregano, salt, and pepper), herbs (cilantro, parsley, and epazote), and lettuce to a blender. Add a little of the chicken broth. Blend until you obtain a smooth sauce.
Add the lard and the seed paste to a skillet. Gradually incorporate the sauce. Once all the sauce is incorporated, lower the heat and stir constantly. Gradually add the remaining chicken broth. Cook for 30 minutes.
Add the chicken and cook for 20 more minutes. Serve hot.
