Basic homemade mole recipe, it won't give you heartburn or irritate your stomach. It's super easy to make since the ingredients are likely to be in your pantry. An alternative to serve it is with pork ribs and nopales or shrimp patties.
8 mirasol chili peppers, remove the seeds, set aside the seeds
1/2 bolillo rolls, in slices or 2 tablespoons of wheat flour
1 tablespoon sesame seeds
1 pinch cumin
1 liter chicken broth
1 kilo tomato
100 grams lard

Cook the chicken as usual with garlic, onion, salt, and herbs. Remove the chicken, set aside the broth. Cook the tomatoes.
In a deep saucepan, with a little oil, lightly brown the chiles, their seeds, the bolillo (or flour if that's the case), and the sesame seeds, stirring until they turn golden. Be careful not to burn anything.
Once the chiles are browned, soak them in a little chicken broth for 5 minutes.
Blend all the ingredients with the chicken broth.
Return to the heat and fry in the melted lard for 20 minutes over medium heat. Once the preparation is sautéed, add the chicken pieces. Adjust the salt to taste. If you prefer it thicker, blend part of the mole with some toasted bolillo slices.
