Mole with Chicken and Chile

This mole with chicken and chile recipe is a delicious dish featuring mole with 4 chiles for you to enjoy with your whole family, a typical Mexican dish but with a gourmet touch.

  • 4 mulato chiles, dry
  • 4 ancho chiles, dry
  • 4 dried guajillo chiles
  • 4 pasilla chiles, dry
  • 2 teaspoons lard, or more if necessary
  • 1 onion, large, peeled and chopped
  • 1 flour tortillas
  • 2 corn tortillas
  • 1 plantain , peeled and sliced
  • 1/2 cups almonds
  • 1/2 cups peanuts
  • 1/8 cups sesame seeds
  • 1 can tomato , peeled
  • 1 tablet chocolate
  • 500 grams chicken, shredded

  • Remove the stems and seeds from the chiles (I suggest using gloves).
  • Heat the lard in a skillet over medium heat.
  • Add the chiles and sauté them until they release their fragrance, about 1 minute. Be careful not to burn them.
  • Remove the chiles and place them in a large bowl.
  • Add the onion along with the garlic and cook until translucent, about 5 minutes.
  • Remove from the skillet and place the same bowl with the chiles.
  • Cut the tortillas and lightly toast in the skillet, about 3 minutes. Remove and add to the bowl.
  • If necessary, melt a little more lard in the skillet.
  • Add the plantain and sauté for 5 minutes. Remove and add to the bowl.
  • Place the peanuts and almonds in the skillet and let them cook until they release their aroma, about 1 minute.
  • Sprinkle the sesame seeds and continue cooking until lightly browned, about 15 to 30 seconds. Remove and place in the bowl.
  • Heat the tomatoes over medium heat in the skillet for 5 minutes.
  • Remove from heat and stir in the chocolate pieces until melted. Pour over the bowl with the chile mixture. Mix well.
  • Blend the ingredients in small batches, adding enough water to achieve a smooth sauce.
  • Place the shredded chicken in a large pot. Pour the sauce over the chicken.
  • Cover and cook over medium-low heat until heated through. Serve.
