  • 1/2 cups water
  • 1 cup orange juice, sour
  • 3 tablespoons apple cider vinegar
  • 100 grams achiote
  • 1/4 onions
  • 1 clove garlic
  • 1/2 teaspoons pepper
  • 1 teaspoon oregano
  • 1/2 teaspoons cumin
  • 1 teaspoon salt
  • 2 chickens, skinless, cut into pieces
  • 1 banana leaf
  • red onion, pickled, for garnish

  • Preheat the oven to 180°C.
  • Blend the water with the orange juice, vinegar, achiote, onion, garlic, pepper, oregano, cumin, and salt.
  • In a bowl, marinate the chicken with the previous mixture for 30 minutes.
  • In a comal, roast the banana leaves to soften them.
  • In a baking dish, place the banana leaves and add the previously marinated chicken.
  • Bake for 45 minutes or until the chicken is cooked and golden brown.
  • Serve on a plate, accompany with white rice and enjoy.
