Slice the onions into rings, sauté until softened, add the chorizo cut into small pieces and fry well. Remove excess fat and add the roasted tomatoes, peeled and seeded, along with the crushed tomatoes and half of the chiles, stir and cook for 10 minutes.
Add the boiled and shredded pork, the tablespoons of broth, the diced hard-boiled potatoes, stir well and let it cook a little longer. Remove and serve garnished with avocado slices. Assemble the tacos with the warm tortillas and enjoy.
