A 30 cm banana leaf is placed on top of another leaf of the same size, then a 23 cm one is placed, on this a piece of chicken, then an onion, a tomato, a bell pepper, two epazote leaves, chicken broth powder is sprinkled, and it is drenched with achiote sauce.
The chicken piece is wrapped, first with a small leaf, then with the next one, and finally with the last one, forming a wrap with the edges facing down.
These packages are placed in a steamer with boiling water, covered, and cooked for approximately 30 minutes or until the meat is very tender.
