Tinga Tamales

  • 30 corn husks
  • 2 cups masa dough
  • 1/2 cups lard
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 2 cups water, warm
  • 1 onion, chopped
  • 2 cups chicken, shredded
  • 1 tomato , chopped
  • 1 chipotle chile, chopped

  • Soak the corn husks in hot water for 20 minutes.
  • Whisk the dough, lard, baking powder, and salt. Add the water while continuing to whisk until a fluffy dough is obtained.
  • Heat the oil in a skillet and add the chopped onion, wait until it becomes slightly transparent, then add the chicken, tomato, and chipotle chili, stir for 5 minutes.
  • Drain the corn husks and then place a bit of the fluffy dough in the center of each husk, leaving some space at the top of each one.
  • Add some of the chicken mixture on top of the dough, then fold in the two sides to leave the filling in the middle.
  • In a tamale pot, add the necessary water according to the pot. Place the steaming rack and line the bottom of the steamer with the leftover corn husks.
  • Place the tamales in the steamer with the open side facing up, cover the tamales with the remaining corn husks or a damp cloth.
  • Cover the tamale pot and cook the tamales over medium-low heat for 1 hour or until the tamales pull away from the husks.
  • If necessary, add more hot water until the desired consistency is achieved.
