1 box Tres Estrellas® rice flour
600 milliliters cow's milk
15 slices Manchego cheese
1 1/2 cups sour cream, for the sauce
1 package cream cheese, 190 g, for the sauce
3 tablespoons chipotle chile, for the sauce
salt and pepper
1 cup Manchego cheese, for gratin
parsley, for decoration

Preheat the oven to 180° C.
Mix the egg with salt, pepper, and garlic powder.
Dip the chicken milanesa in the egg mixture, remove the excess, and coat with Tres Estrellas® rice flour; repeat to have a thicker coating.
Heat oil over medium heat and fry the milanesas until golden. Drain on paper towels and cut into strips with a knife.
For the crepes, mix Tres Estrellas® crepe flour with milk, pour a ladle into a pre-greased skillet, and cook for 2 minutes.
Place a slice of cheese in each crepe, add the chicken strips, and roll up. Set aside.
For the sauce, blend the cream with the cheese, chipotle pepper, salt, and pepper.
Place the crepes in a casserole dish, pour the chipotle sauce, place slices of manchego cheese, and repeat to form layers.
Bake for 15 minutes or until the cheese is gratinated.
Serve and garnish with parsley, accompanied by a salad.
