Chicken Rolls with Mushrooms

1 kilo chicken breast , boneless
100 grams bacon
1/2 sour cream
210 grams tomato purée
2 chipotle chiles
200 button mushrooms
150 grams deli ham
salt , and pepper to taste

Preparation

Slice the chicken breast into thin pieces.
Cut the ham into thin strips.
Place the ham in the center of the chicken, and form a roll. Wrap with strips of bacon.
Preheat the oven to 220°C for 10 minutes.
Blend the cream with the tomato puree and the chipotle pepper. Season with salt and pepper to taste.
Place the chicken rolls in an oven-safe dish. Top with a layer of mushrooms and some cherry tomatoes.
Soak the rolls with the prepared mixture.
Bake for approximately 45 minutes at 200°C. This will depend on your oven, check constantly to ensure the chicken and sauce do not dry out.
