  • • Prepare the herb butter.
  • • Remove the fat and tail from the chicken. Wash the chicken in a bowl with salted water and vinegar. Drain and dry it with paper towels.
  • • Separate the skin from the breast and thighs and place the herb butter between the skin and the meat of the chicken. Tie the chicken with kitchen twine. Pass a long piece of twine underneath the chicken and join the ends so that they are equal. Cross them and pass it again over the shoulders and once more under the chicken and bring them to the thighs, wrap and tie the ends. It's easy; I had never trussed a chicken before, and I did it.
  • • Heat the pot with a little oil over high heat and sear the chicken (if your pot is not metal, do this in a separate saucepan or skillet). Reserve the chicken.
  • • Place the potatoes and chicken giblets and cook for 4 hours or until the chicken is cooked.
