Stuffed Chicken Breast

A delicious recipe for Stuffed Chicken Breast, in this case, I prepared it with dried tomatoes that give it a delicious flavor and aroma; you can use the oil from the tomatoes for added flavor.

  • 4 boneless chicken breast
  • 10 fresh basil leaves, chopped
  • 50 grams Mozzarella cheese, in cubes
  • 5 sun-dried tomatoes, chopped
  • dehydrated tomato oil
  • 1/4 cups balsamic vinegar
  • 3 tomatoes, cut into cubes
  • salt, to taste
  • pepper, to taste

  • Preheat the oven to 180°C (350°F).
  • Cut an opening in one of the long sides of each chicken breast, being careful not to cut through the opposite side. Season with salt and pepper.
  • Mix the tomato, basil, cheese, and a few drops of oil from the tomatoes. Stuff each breast with the mixture.
  • Place the chicken on one side of a baking dish with a little oil from the tomatoes; add the tomatoes on the other side of the baking dish. Drizzle balsamic vinegar over the chicken breasts.
  • Bake the chicken for 30 minutes or until cooked through.
  • Serve the chicken with the tomatoes on top.
