Poblano Chicken Pie

  • 2 cups Granvita® Wholegrain Oats
  • 3 Poblano chiles
  • 1 tablespoon coarse salt, for the chiles
  • 1 onion, small or ½ large onion
  • 2 tablespoons olive oil
  • 2 cups chicken, cooked and shredded

  • 3 eggs
  • 1/3 cups vegetable oil
  • 1 1/2 cups lactose-free milk
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup Manchego cheese, grated

  • For the poblano strips: Roast the chiles directly over the fire for 10 minutes or until completely blackened. Remove from the heat, place in a plastic bag, add coarse salt, and let rest for 10 minutes, preferably in the refrigerator.
  • While the chiles rest in the refrigerator, cut the onion into thin strips and set aside.
  • Once the resting time for the chiles has passed, remove them from the bag. Peel the chiles with the help of a knife, remove the veins and seeds, and slice them. If necessary, you can rinse them under cold running water to ensure they are clean.
  • Pour the olive oil into a skillet over medium heat and cook the onion until it slightly changes color, then add the poblano strips, shredded chicken, and season with salt. Cook for 6 minutes or until the chicken is lightly browned. Set aside and cool.
  • Preheat the oven to 180 °C.
  • Grind the Granvita® Whole Oats in a food processor until you obtain flour, then place it in a bowl and mix with the cooked corn, egg, vegetable oil, milk, baking powder, and salt until combined. Once the ingredients are integrated, add the chicken strips mixture, finish incorporating, and set aside.
  • Pour the poblano chicken pie mixture until it fills ¾ of the capacity of a previously greased baking dish. Add grated Manchego cheese on top and bake at 180 °C for 20 minutes.
  • Serve the chicken pie immediately. You can garnish with some chopped parsley if desired.
