Rice with Chicken and Chorizo

  • Brown the chorizo and set aside. In the same skillet, brown the chicken and set aside.
  • Add the olive oil, sauté the onion and garlic. Add the tomato and cook until it releases its juices.
  • Add the rice and lightly brown it. Add the meat, chicken, and chorizo.
  • Pour in half of the chicken broth, season with salt and pepper, and add the sprig of parsley. Cover and cook for 15 minutes.
  • Add the rest of the chicken broth and cook for 10 more minutes, then sprinkle with parsley.
