Shredded Chicken in Sauce with Vegetables*

This recipe for shredded chicken in sauce with vegetables is chicken in sauce with vegetable peppers.

  • 1 kilo chicken breast , cleaned of fat and cut into strips
  • 1/2 onions
  • 1 green bell pepper, medium
  • 1 red bell pepper
  • 2 cloves garlic
  • white wine, a touch
  • 1 tub tomatillo, fried
  • olive oil
  • salt
  • 1 leaf bay

  • Put 3 tablespoons of oil and the bay leaf in a pot, chop all the onion, red and green peppers, and garlic, add to the pot and sauté.
  • Then cook the meat and let it sauté a little. After that, add a generous splash of fried tomato, when it's ready, and a splash of wine, and let it cook until the meat is done. Add more vegetables (various peppers) and salt, and let it simmer for about 25 to 35 minutes, stirring occasionally.
  • Then you can serve it with whatever you like; I make my arepas and fill them, they are delicious and my partner loves them.
