Sauté the onion and bell pepper with a little oil.
Cut the ham and mozzarella cheese into strips, set aside.
Stuff the chicken with the aforementioned ingredients. Season the chicken with salt and pepper. Wrap tightly with plastic wrap, and then with aluminum foil. Bake for 45 minutes to 1 hour at 180°C.
In a saucepan, arrange the following ingredients: onion, julienne bell pepper, sweet potato, potatoes, and pumpkin in slices.
Season with salt, garlic, and parsley. Cover and bake at 180°C for 45 minutes. It is not necessary to move the ingredients.
Remove the chicken from the oven and cut it into thick slices. Serve with the roasted vegetables.
