Stuffed Marinated Chicken

  • 6 guajillo chiles, for the marinade
  • 4 cloves garlic, for the marinade
  • 2 bay, for the marinade
  • 2 cloves, for the marinade
  • 2 allspice berries, for the marinade
  • 1 tablespoon oregano, for the marinade
  • 3 tablespoons vegetable oil
  • 1 cup almonds, skinless
  • 1/4 cups onion, finely chopped
  • 1 plantain, cut into cubes
  • 4 tomatoes, cut into cubes
  • 1 cup potato, cut into cubes
  • 1 cup carrot, cut into cubes
  • 1/2 cups raisins
  • 3/4 cups olives

  • Preheat the oven to 200°C.
  • Cook the chiles, garlic cloves, bay leaves, cloves, pepper, and oregano in boiling water. Remove and drain.
  • Blend the previous preparation until you obtain a smooth marinade.
  • In a skillet over medium heat, heat the oil, fry the almonds, onion, plantain, tomato, potato, carrot, raisins, olives, and cook for 5 minutes. Let cool and set aside.
  • Fill the chicken with the vegetable mixture, tie with cotton thread, and season very well with salt and pepper.
  • Place the chicken in a baking dish and brush with the marinade. Bake for 1 hour or until cooked, basting occasionally with more marinade. Remove and let rest before cutting.
  • Serve the chicken and enjoy.
