Chile and Amaranth Breading

  • 1 cup amaranth, for the breading
  • 1 cup panko, for the breading
  • 4 guajillo chiles, roasted, for the breading
  • 2 ancho chiles, roasted, for the breading
  • 1/4 cups árbol chile, roasted, for the breading

  • 1 cup flour
  • 300 grams chicken cutlet, in medium strips
  • cooking spray
  • dip, creamy chipotle
  • parsley, finely chopped, for decoration
  • salad, citrus, for decoration

  • With the help of the Kitchen Central®, grind the amaranth for 5 minutes until it forms flour. Place in a bowl and set aside.
  • Place the chiles in the Kitchen Central® and grind on medium speed for 10 minutes until they are completely powdered. Place in the bowl with the ground amaranth.
  • Add the panko to the bowl with the amaranth and chiles, and mix until all ingredients are integrated.
  • Place the flour on a flat plate; in another, the previous mixture of panko, amaranth, and chiles, and in a bowl the beaten eggs.
  • Dip the chicken strips in the flour, fully coating the chicken, then dip in the egg, and finally in the chile breading, completely covering the chicken and pressing to ensure it sticks well.
  • Place on the Cuisinart® Air Fryer rack and spray with cooking spray, then place in the Cuisinart® Air Fryer and set to nugget mode for 5 minutes.
  • Serve on a flat plate, decorate with sliced jalapeño chiles and chopped parsley. Accompany with creamy chipotle sauce.
