In a large saucepan, cook over medium heat 1/2 cup of water, the pork, and the salt. Cook for 45-50 minutes or until the liquid has evaporated and the pork is lightly fried in its own fat.
Add the butter and cook for 5 more minutes.
In a small saucepan, bring the chiles to a boil in 1 cup of water, reduce to low heat, cover, and cook for 10 minutes.
Place the chiles and water in a blender and add the oregano, cumin, parsley, and garlic. Blend to make a sauce.
Pour the sauce over the pork and set over medium heat until it boils, then lower the heat, cover the saucepan, and cook for 1 hour or until the pork is tender and easy to cut (if you see that it needs more water during cooking, you can add it).
