Coffee Marinade

  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon black pepper
  • 1/4 cups thyme, powdered
  • 3 tablespoons fresh rosemary
  • 1/4 cups olive oil
  • 500 grams center-cut tenderloin, tied

  • In a bowl, mix the coffee with the garlic, black pepper, thyme, fresh rosemary, and olive oil until you achieve a homogeneous mixture. Marinate the beef tenderloin for 1 hour and set aside.
  • Season with salt and cook in a skillet over medium heat to your desired doneness, stirring constantly. Remove from the skillet and let rest for 10 minutes before slicing, serve with chimichurri and fresh rosemary. Enjoy.
