Delicious Stuffed Chicken with Vegetables

  • 1 cup leek, cut into strips
  • 2 tablespoons garlic, finely chopped
  • 2 cups chard, cut into strips
  • 1 cup mixed bell peppers, cut into strips
  • 1/2 cups corn kernel
  • 4 chicken cutlets
  • salt

  • 1 cup new potatoes
  • 1 cup baby carrot
  • 1 cup broccoli
  • 1 cup chicken broth
  • 1/4 cups white wine

  • In a medium skillet, add 1 tablespoon of Nutrioli® Pure Soybean Oil, sauté the leek, garlic, Swiss chard, colorful bell peppers, corn kernels, and season with salt and pepper. Let cool and set aside.
  • Season the chicken breasts with salt and pepper, fill them with the vegetables, and roll them up tightly.
  • In a medium skillet, heat 1 tablespoon of Nutrioli® Pure Soybean Oil, sear the breasts on both sides, add the baby potatoes, carrots, broccoli, then add the chicken broth, white wine, and thyme. Cover and cook for 10 minutes over medium heat.
  • Serve on a serving plate, accompanied by pasta.
